Meatball Soup

Who doesn't love soup? Weather you are are sick or just want a comforting meal.
I received this recipe from a friend of mine. I hope you enjoy it as much as my family does.
2. add onions, carrots, celery, potatoes and green beans
6. simmer soup with meatballs additional 20 mins.

Ingredients for soup
1/3 cup olive oil
1 stick butter
2 onions- sliced & quartered
2 carrots - sliced
2 celery stalks - sliced
4 medium potatoes - diced in large pieces
1/2 lb. fresh green beans - cut
1/2 small head of cabbage - thinly sliced
2 zucchini - sliced & halved
1 28 oz. can of diced tomatoes
6 cups of water
6 beef boullion cubes
1 can Vegetable broth
1 tsp. salt
1/2 tsp. pepper
Directions for Soup ( you will need a LARGE pot)
1. melt butter with olive oil over medium heat
2. add onions, carrots, celery, potatoes and green beans
3. stir to coat vegetables with butter & olive oil
4. Cook 20 mins., stirring occasionally
5. add water, bouillon cubes, vegetable broth, salt, pepper, cabbage, zucchini, and tomatoes with all their liquid
6. over high heat, bring to a boil, then stir
7. reduce heat to low, cover, & simmer 40 mins.
Ingredients for Meatballs
1 1/2 lbs. lean ground beef
1/3 cup Italian bread crumbs
1/2 tsp. garlic powder
Directions for Meatballs- Pre-heat oven to 350 degrees
1. mix ground beef, bread crumbs and garlic powder (with hands)
2. roll into meatballs
3. line cookie sheet with non - stick foil
4. bake meatballs at 350 for 1/2 hour
5. add meat balls to soup

I occasionally make meatballs to go with spaghetti but never in a soup. Sounds delish, gonna try it next time :)
